Kaihua river snail, also known as clear-water snail, is a traditional local delicacy in Kaihua County, Quzhou. It is different from the ordinary snail, with a black, slender shell and fresh gray-green flesh inside. It grows in streams and other live water in the Kaihua area at the source of the Qianjiang River, and is known locally as the clear-water snail because it has little mud.
Kaihua river snail is China’s traditional aquatic products. Due to its tender and delicious meat, unique flavor, rich nutrition, it has been renowned as “the pearl in the plate” in China. It requires high water quality and generally cannot be cultivated in captivity.
